First issue you'll have is that the Hollywood Racks bike racks are not rated for use behind fifth wheel campers as the ride quality there is very rough. We can't recommend you continue using your bike rack there as it most likely will fail over time.

Nearly all travel trailers are now prepped for the Furrion systems like the Furrion RV Observation Camera System # FOS43TASF that you referenced. You can pretty easily go from a 205/75-14 to a 15 inch tire size like 205/75-15 like with the # AM32395 without clearance issues. This will give you a slightly larger wheel and tire which will have a higher weight capacity. So you might gain a slight increase in ride height if that's something you'd like as well as additional weight capacity.
